Michel Chapoutier is one of the most respected winemakers in France. Ever since he took over the family business at the age of 26 in 1990, he has turned the cellar into the leading cellar in the Rhine Valley. Michel combines modern and traditional winemaking - navigating biodynamic wine production while expanding its business around the world and experimenting with innovative winemaking techniques.Since 1996, all M. Chapoutier labels contain information about the wine written in Braille. In this way, he paid tribute to Maurice Monnier de la Sizeranne, the inventor of the first shortening of the Braille code and the founder of the Valentin Haüy Association.

The grapes from which this wine is produced come from three different vineyards. Part of the fermentation is carried out in stainless steel tanks and part in demi-muids. The lees are stirred up (bâtonnage) for the first 2-3 months adding texture to the wine. Ageing: 40-30% takes place in stainless steel vats. The remaining 60-70% is aged in demimuids (600 litres) barrels, 10% of which are made of new wood and 90% of wood previously used for one to three wines.

Grapes are hand-harvested to the limit of over-maturity. Due to their age, these vines give low yields. Maceration lasts between 4 and 5 weeks, to obtain a polymerization of tannins. Only the free-run wine is used for this single vineyard. The wine is matured in oak casks (with a 30% average proportion of new ones) between 18 and 20 months. The clarification is natural. According to the vintage, the wine can be kept from 30 to 60 years.

The grapes are hand-harvested once very ripe. The natural alcohol content is often 12,5% vol. Pressing of the whole grapes. Cold settling between 24 and 48 hours. Half of the wine is fermented in vats, the other part in big wooden barrels (600 liters). Ageing takes place on lees from 8 to 10 months, with stirrings. The two parts are blending before bottling.

The grapes are hand-harvested at a very good maturity. The grapes are 100% destemmed. Slow fermentation in small concrete vats. The process of fermentation is very long and lasts for more than one month, to polymerize tannins. Only the free-run wine is used in this single vineyard. Entirely aged in casks (new casks and casks having matured wine once or twice before) from 16 to 18 months.

This wine is made from a blend of four plots. The vinification takes place in unclad, rough concrete tanks. The vatting period lasts from 4 to 5 weeks with regular pumping over operations carried out at the start of the maceration, some cap punching, and then a passive infusion with a stirring of the lees in the last 3 weeks. By tasting the wine in the tank each day, they are able to tailor different operations to the wine and determine the best running-off date. Malolactic fermentation takes place in barrel. 50% in 228-litre barrels (pièces bourguignonnes), 50% in 600-litre barrels (demi-muids), of which 20 to 25% are new. The wine is racked at the end of winter. Ageing can last 12 to 18 months depending on the vintage and tastings of the wine.

Crozes-Hermitage Sicamor, a rich, medium to full-bodied, concentrated Syrah. Grape is picked by hand, at perfect maturity. Traditional vinification, destemmed grapes. Fermentation lasts 10 days in rough concrete tanks. Maceration lasts 4 to 5 weeks. The wine goes into barrel warm. The barrels used are demi-muids previously used for 4-5 fills. It spends 12 months in barrel, then 6 months in concrete tank to further hone the structure.

Hermitage “Monier de la Sizeranne” comes from a blending of different soils from West to East. Entirely destemmed, the grapes ferment in concrete tanks. From one to two daily treadings ensure a good extraction. Temperature varies between 30 and 33°C. 18 months ageing, 85% of which takes place in oak barrels, giving the wine its notes of oak. The remaining 15% is aged in concrete tanks to preserve minerality and freshness.
