The best pieces of meat and the selected bacon are cut into cubes and not ground. The salami mature at least 18 months in order to release a large bouquet of aromas and develop a tertiary note of prolonged maturation.
Ingredient: pork 50%, game meat (bear, deer) 30%, pork back fat 20%, sea salt, spices.
