Clear lemon in colour. The nose is fruity and fragrant. Lively and mineral, the Petit Chablis has layers of juicy white nectarine and peach flavours that result in a fresh finish.
Whole bunches were collected into a pneumatic press. The fruit was settled for 12 hours at 12 to 15°C in specially designed wide tanks, resulting in very clear juice. Fermentation lasted for two weeks at 16°C in stainless steel tanks. The wine was then aged for six months on fine lees in stainless steel tanks. Minimum filtration took place to preserve the natural character of the wine.
The vines are cared for in the same way as the Domaine's own, with utmost attention paid to maintaining the lively, mineral fruit character that typifies good Chablis. The Petit Chablis was harvested according to the ripeness of each plot. Winemaker Grégory Viennois refers to Chardonnay's 'two-day window', once each parcel has ripened it is harvested within two days.
