This enjoyable white Wine produced by M. Chapoutier is grown in the Côtes-du-Rhone area of Rhône. It is complex and very elegant. The wine’s roundness is a perfect match for its freshness.

The wine is a deep ruby-garnet color. The bouquet is ripe, smelling of earth, raisins, dried figs, even jams, vanilla, cinnamon. Wine with a hint of leftover sugar, full body, warm. It has an abundance of structure, intense taste. Extreme style with an extremely nice aftertaste.
The grapes from which this wine is produced come from three different vineyards. Part of the fermentation is carried out in stainless steel tanks and part in demi-muids. The lees are stirred up (bâtonnage) for the first 2-3 months adding texture to the wine. Ageing: 40-30% takes place in stainless steel vats. The remaining 60-70% is aged in demimuids (600 litres) barrels, 10% of which are made of new wood and 90% of wood previously used for one to three wines.

Grapes are hand-harvested to the limit of over-maturity. Due to their age, these vines give low yields. Maceration lasts between 4 and 5 weeks, to obtain a polymerization of tannins. Only the free-run wine is used for this single vineyard. The wine is matured in oak casks (with a 30% average proportion of new ones) between 18 and 20 months. The clarification is natural. According to the vintage, the wine can be kept from 30 to 60 years.
“Les Granilites” is a mineral wine. Its terroir provides it with lovely taunt acidity and a wellhoned tannic structure. Fine, tight tannins, beautiful mineral tautness derived from the granite.
The grapes are hand-harvested once very ripe. The natural alcohol content is often 12,5% vol. Pressing of the whole grapes. Cold settling between 24 and 48 hours. Half of the wine is fermented in vats, the other part in big wooden barrels (600 liters). Ageing takes place on lees from 8 to 10 months, with stirrings. The two parts are blending before bottling.
