To preserve the aromas and their best qualities, It is realized a night harvest of a selection of varieties. The grapes are refrigerated with dry ice during the transport to the winery to keep all their fruity aromas. Then a soft squeezed is performed, carrying out the peculiar maceration at low temprature to extract the maximum of primary aromas. The bleeding is produced through extraction by gravity and then controlled temperature and using selected yeast.
